Recipe: Pumpkin Gingerbread

Ingredients

1/2 cup butter (or margarine)

1 generous cup pumpkin

1 cup brown sugar

2 eggs

1 cup molasses

3 cups flour (1 wheat, 2 white)

1/2 tsp. salt

1 1/2 tsp. baking soda

1 tsp. ginger

1 tsp. cinnamon

1 cup boiling water

1/4 tsp. nutmeg

 

Cream butter and sugar until light. Add eggs and molasses, beat thoroughly. Add salt, soda, ginger, and cinnamon. Beat well. Add boiling water and flour. Beat. Bake in greased 9X13” pan at 350 degrees for 35 to 40 minutes.
