How A Single Mother’s Nutrition Journey is Making a Big Impact on the Health of Her Back

Type 2 diabetes has plagued Tiffany Forshay of Orem, Utah for over 10 years. As a single mother of 2 autistic children, she has a hectic life with no shortage of challenges. For years she concentrated on taking care of her children, but not herself. As a result, her health began to suffer. After meeting Brandi Dawson, one of Summit’s excellent Physician’s Assistants, Tiffany kept hearing Brandi’s voice in her head…

What Tiffany did not realize was that her journey to return to a life filled with good nutrition would help even her chronic back pain. But it took some time and specialized care to realize just how powerful her nutrition choices were.

Brandi introduced Tiffany to Summit’s resident nutritionist, Jennifer Bowden, PhD. Jennifer helped Tiffany understand how best to eat to help her potentially reverse her diabetes someday. They worked together to begin overcoming Tiffany’s emotional eating habits brought on by the struggles of her life as a single mother of 2 autistic children.

Years earlier, Tiffany had a disc fusion performed by Dr. John Edwards. The procedure was successful. And now, with Jennifer Bowden’s help Tiffany is doing much better with her nutrition, which has greatly relieved her back pain. She used to feel sick all the time, as if she constantly had the flu. But now, she’s making great progress. She has much greater control of her blood sugar and has more energy to take care of her children.

Now she’s begun losing weight and gaining muscle tone. Her family doctor even considered removing her diabetes medications due to her promising progress. She now has a trusted ally in her health journey in Jennifer Bowden. They work together regularly to make sure Tiffany is managing her calories, getting enough vitamins, proteins, and minerals. Jennifer helps her even more with her mindset so she can break the cycle of poor nutrition that led her to diabetes.

Tiffany feels empowered and much more confident in her ability to move forward, take care of her children, take care of her own health, and experience a full and complete life of health.
